Knives require regular care. Every chef knows that only a sharp knife allows for effective work. It's recommended to sharpen the knife before each use and to sharpen it regularly. The blade and wooden handle should also be occasionally rubbed with a suitable oil for protection.
WHICH GRINDING STONES?
For repairing imperfections and/or for pre-grinding, use a 300 or 400 grit stone. For regular grinding, stones starting at 800 grit are available, but 1,000 grit is usually used. Polishing stones for that final touch of sharpness are available from 3,000 to 6,000 grit.
