Knives require regular care. Every chef knows that only a sharp knife allows for effective work. It's recommended to sharpen the knife before each use and to sharpen it regularly. The blade and wooden handle should also be occasionally rubbed with a suitable oil for protection.
WHICH SHARPENING STICK?
To keep knives sharp, they should be honed regularly with a whetstone. Overuse of the knife bends the cutting edge—the serration—and thus becomes blunt. With the whetstone, this edge can be straightened, and the knife will be sharp again in no time.
CORRECTING OR CUTTING?
A distinction is made between "maintaining" sharpening stones and "removing" sharpening stones. Steel sharpening stones belong to the first category and remove little to no material from the blade. Ceramic and diamond sharpening stones belong to the abrasive sharpening stones, as they remove material during sharpening.
